CHOC-COCONUT BALLS 

INGREDIENTS:

- 1/2 cup coconut oil (melted)

- 1/2 cup walnuts

- 1/2 cup almonds

- 2/3 cup desiccated coconut (to be divided)

- 1/3 cup cacao powder

- 10 whole pitted dates roughly chopped

METHOD:

  1. Combine walnuts and almonds into food processor and pulse until roughly chopped.

  2. Set 1/3 of desiccated coconut aside in a seperate bowl.

  3. Add the dates, cacao, coconut oil and remaining 1/3 cup coconut to the food processor and turn on until well mixed. 

  4. Spoon out mixture one at a time using teaspoon and roll into balls.

  5. Coat each ball in the remaining coconut.

  6. Place onto baking tray and store in fridge for 30minutes to harden.

  7. Once ready can be stored in airtight container in fridge for up to 2 weeks, or alternatively for longer periods in freezer.
